Stuffed Protein Chicken Cushion — The High Protein Low Carb Showstopper
Contents
Made this for a Sunday dinner when I wanted something that looked genuinely impressive without spending the entire day in the kitchen. A whole deboned chicken breast stuffed with spinach, ricotta, sun-dried tomatoes and parmesan — wrapped in streaky bacon and tied into a neat cushion shape that comes out of the oven golden, crackling and so beautiful you feel obligated to photograph it before anyone touches it. The inside is molten and creamy. The outside crackles. Every slice reveals a perfect spiral of filling. It took forty minutes start to finish and everyone at the table thought I had been cooking all day.
The chicken cushion is a British butcher’s classic that deserves far more attention than it gets. The original versions use sausage meat stuffing and breadcrumbs — delicious but heavy and high in carbohydrates. This version replaces the bread-based stuffing with a high protein filling of ricotta, wilted spinach, parmesan and cream cheese that melts into the chicken as it roasts, basting the meat from the inside while the bacon crisps on the outside. The result is simultaneously lighter and more satisfying than the original — the filling is richer, the flavours more Italian, the macros completely different.
At over 48 grams of protein per serving with under 6 grams of net carbohydrates this is the dinner party showstopper that fits perfectly into any high protein eating plan without a single visual or flavour compromise.
Why You’ll Love This Recipe
The Stuffed Protein Chicken Cushion solves the dinner party problem for anyone eating high protein. It looks extraordinary — the kind of dish that makes people reach for their phones before picking up their forks. It is genuinely impressive to serve. And yet it is built from simple ingredients, takes forty minutes, and requires nothing more technically demanding than butterflying a chicken breast and tying it with string. The bacon wrapping keeps the chicken moist through the entire roasting time. The filling holds everything together and flavours the meat from inside. And the result slices beautifully — a perfect spiral of green and white filling against the white chicken and golden bacon in every cross-section.
Ingredients
Serves 4
For the chicken cushions:
- 4 large boneless skinless chicken breasts, approximately 250g (9 oz) each
- 8 to 12 rashers streaky bacon (enough to wrap each breast completely)
- 1 tbsp olive oil
- ½ tsp fine sea salt
- ½ tsp freshly cracked black pepper
- ½ tsp smoked paprika
- Butcher’s twine for tying
For the high protein filling:
- 200g (¾ cup) full-fat ricotta cheese
- 100g (3.5 oz) cream cheese, room temperature
- 60g (2 oz) parmesan, freshly grated
- 150g (5 oz) fresh baby spinach, wilted and squeezed completely dry
- 4 sun-dried tomatoes in oil, finely chopped
- 3 garlic cloves, minced
- 1 tsp dried Italian herbs
- ½ tsp fine sea salt
- ¼ tsp freshly cracked black pepper
- ¼ tsp chilli flakes (optional)
- Zest of ½ lemon
For serving:
- Lemon wedges
- Fresh basil leaves
- Extra parmesan shavings
Method
Step 1 — Make the filling
Wilt the baby spinach in a dry pan over medium heat for 60 to 90 seconds until completely collapsed. Transfer to a clean tea towel and squeeze out every drop of moisture — wet spinach makes the filling watery and prevents it from holding its shape when sliced. Finely chop the wilted spinach. In a bowl combine the ricotta, cream cheese, parmesan, chopped spinach, sun-dried tomatoes, garlic, Italian herbs, salt, pepper, chilli flakes and lemon zest. Mix until completely combined. Taste and adjust seasoning. Refrigerate for 15 minutes — a chilled filling holds its shape better when the chicken is tied.
Step 2 — Butterfly the chicken
Place each chicken breast flat on a board. Using a sharp knife held parallel to the board, slice horizontally through the thickest part of the breast without cutting all the way through — open it like a book. Cover with cling film and pound lightly with a rolling pin until an even 1cm thickness throughout. Season the inside surface lightly with salt and pepper.
Step 3 — Fill and wrap
Spread a generous layer of filling across the inside of each opened chicken breast leaving a 1cm border. Roll the chicken tightly around the filling from one end to the other forming a tight cylinder. Lay 2 to 3 rashers of streaky bacon flat on the board slightly overlapping. Place the chicken roll at one end of the bacon and roll the bacon around the chicken completely, wrapping tightly. Tie with butcher’s twine — one piece around the middle, two more at even intervals — pulling firmly to create a neat compact cushion shape.
Step 4 — Sear
Preheat oven to 200°C (400°F). Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken cushions seam-side down for 2 minutes until the bacon begins to colour and crisp. Turn and sear all sides — about 6 minutes total — until the bacon is golden all over.
Step 5 — Roast
Transfer the skillet directly to the oven. Roast for 20 to 22 minutes until the internal temperature reads 74°C (165°F) and the bacon is deeply golden and crackling. Rest for 5 minutes before removing the string.
Step 6 — Slice and serve
Remove the string carefully. Slice each cushion into 3 to 4 thick rounds on a slight diagonal — each slice should reveal a perfect spiral of green and white filling. Arrange on plates. Scatter fresh basil leaves and parmesan shavings. Serve with lemon wedges.
Tips for the Perfect Stuffed Protein Chicken Cushion
Squeeze the spinach completely dry. This is the most important step in the filling preparation. Any moisture remaining in the spinach will make the filling loose and watery — it will not hold its shape when the chicken is sliced. Squeeze until no more liquid comes out. Then squeeze again.
Chill the filling before using. A warm or room temperature filling spreads too easily and does not hold its cylinder shape during rolling. Fifteen minutes in the refrigerator firms the filling enough to stay in place when the chicken is rolled and tied.
Tie the cushions firmly. Loose string produces a cushion that opens during roasting, spilling the filling into the pan. Pull the string firmly and tie secure knots — the cushion should feel taut and compact before it goes into the oven.
Sear before roasting. The searing step is not optional. It renders the bacon fat and starts the crisping process — bacon that goes directly into the oven without searing comes out soft rather than crackling. Six minutes of searing produces a bacon crust that stays crispy through the entire roasting time.
Variations Worth Trying
Pesto and mozzarella version. Replace the ricotta filling with 3 tablespoons of good quality basil pesto, torn fresh mozzarella and sun-dried tomatoes. Roll, wrap and roast identically. The pesto melts into the chicken as it cooks and produces a completely different but equally extraordinary filling.
Mushroom and taleggio version. Sauté 200g of finely chopped mushrooms with garlic and thyme until completely dry. Mix with taleggio cheese instead of ricotta. The earthiness of the mushroom against the funky taleggio is exceptional.
Prosciutto wrapped version. Replace the streaky bacon with thin slices of prosciutto laid flat and slightly overlapping. Prosciutto crisps faster and more delicately than bacon — reduce the searing time to 4 minutes and the roasting time to 18 minutes.
Make-Ahead and Storage
The chicken cushions can be assembled, tied and refrigerated unbaked for up to 24 hours — remove from the refrigerator 15 minutes before searing. This makes them ideal for dinner party preparation. Baked cushions keep refrigerated for up to 3 days — reheat in a 180°C (350°F) oven covered with foil for 12 minutes. They also slice beautifully cold and work well in a lunchbox or salad the next day.
What to Serve Alongside
Roasted garlic cauliflower mash is the ideal low carb accompaniment — creamy, rich and perfectly suited to the pan juices from the cushion. Roasted tenderstem broccoli with lemon and parmesan alongside adds colour and additional protein. A simple rocket salad with shaved parmesan and lemon dressing cuts through the richness of the bacon and filling. A glass of cool Pinot Grigio or a sparkling water with lemon makes the whole dinner feel like a proper occasion.
The Showstopper That Takes Forty Minutes
There is a category of dinner that looks like it took all day and actually took forty minutes — the kind that makes people arrive at the table and go quiet for a moment before they pick up their forks. The Stuffed Protein Chicken Cushion lives permanently in that category. Golden crackling bacon. A molten spiral of ricotta, spinach and parmesan revealed in every slice. Forty-eight grams of protein. Forty minutes. Make it once and it becomes the dinner you make whenever you need to impress someone — or simply whenever you deserve something genuinely extraordinary on a Tuesday.
